A Treat to Myself

Today I treated myself to my favorite fast-food breakfast sandwich.

An Egg McMuffin.

Okay — some of you are like YUCK!  But I’m sure there are those that are like Yum!   In my pre-diabetic days, I ate one of these with a carton of milk every morning driving to work.  I don’t care for other McDonald’s fair – but this one item has always been my favorite.

But alas, there came the diagnoses of diabetes and no more breakfast runs through the local drive-through. 

Since getting it under control with medication, I have been venturing into eating food I swore off initially – in moderation.  This morning was scheduled as my Egg Mac day.  Now there are 30 carbs in this breakfast sandwich, which is the max I can have for each meal.  The muffin itself has the majority of carbs, 27.  So how do you back off the carbs? You remove part of the bun.

No, I didn’t get the milk and I didn’t eat it while driving back to the house.  I came home and dutifully removed the top part of the muffin and tossed it.  Then carefully cut the sandwich into small pieces, 15 seconds in the microwave to reheat and I had joy on a plate.  I savored every bite like it was a piece of kobe steak.

Planning for a diabetic is key.  Today I planned a treat.  My sugar is fine, my stomach and tasted buds are happy, and once again I’ve proved that I can win against this disease.
